Course Information
HUBI 4700 – Field Studies in Nutrition and Health
Field Studies in Nutrition and Food incorporates field trips in and around Harlow and London that are focused on aspects of nutrition and food that are not currently core parts of our nutrition stream. The approach can be divided into three subcategories: Farm to Fork Food Systems; Food, Nutrition and Health; and Modern Nutrition Research. During each of the field trips, the students collect information (i.e. photos, research notes) that becomes the basis for assignments. Before and during the stay at Harlow, the students do some preparatory work for various site visits and submit a mini-assignment (daily blog, learning reflection, interpretation etc.) related to each field trip. Following the stay at Harlow, students complete most of the course work, including a media assignment and a research paper. The course timeframe generally includes a 2-3 week stay at the Harlow Campus at the beginning of the Spring semester. After leaving the UK, the remainder of the course is completed remotely via Brightspace and Webex meetings with the instructors.
HUBI 4701 – Culture, Food, and Health: An International Perspective
The aim of the course is to expose students to varied ethnic food environments, such that they may gain an understanding of the sociocultural importance of foods, and are able to identify some of the biocultural factors that have led to specific food and dietary patterns, including the use of medicinal foods. The course strategy is to supplement traditional learning (i.e. reading and lecture material) with experiential learning, by taking advantage of the ethnic mosaic of communities in and around the Harlow Campus, mostly in the greater London area. Students complete most of the course work following the stay at Harlow. The course timeframe includes a 2-3 week stay at the Harlow Campus near the beginning of the Spring semester. The remainder of the course is completed remotely via Brightspace and Webex meetings with the instructors.
HUBI 4241 – Nutrition, Culture and Health: Perspectives from India
The course aims to cover many aspects of human nutrition, culture, and health at the community and international levels. Students will get exposure to diverse traditional foods from different regions of India, and learn about the medicinal properties of foods as well as the use of spices/herbs for their nutritional and food preservation properties. During the field trips, students will gain hands-on culinary experiences, visit holistic health centers (yoga, naturopathy, and Ayurveda), formulate nutraceuticals from herbs/medicinal plants, and attend activities surrounding food and culture. The course will include two to three weeks of intensive field trip studies in India near the beginning of the Spring semester. Students will complete the rest of the course assignments after returning from India.
New Course Coming in Spring 2025:
HUBI 4702 - Beyond Borders: A Cross-Cultural Exploration of Drugs and Medicines
This course builds on the principles covered in core HUBI programming, and applies them to the different practices used by peoples and cultures throughout history to promote health and treat disease. The uses of drugs and other medicinal preparations is also explored. Students will collect information during the field trips through various media (i.e., blogs, photo stories, research notes) and collate these as reports, which will also be source information for the final paper which will be completed remotely/online following return from Harlow.
