Understanding How Diet and Lifestyle Impact the Development of Disease Risk
The resource burden cardiometabolic diseases place on healthcare systems is staggering. My research group aims to better understand how and why certain foods, dietary patterns, and lifestyle choices promote health while others promote disease. In particular, 1) better explaining the role dietary fructose plays in cardiometabolic risk development, 2) how sleep and energy balance interact to promote health or disease, 3) describe how different types of dietary omega-3 fat sources are digested, absorbed, and distributed throughout the body in the postprandial period, and 4) valorization of underutilized marine species from the Atlantic Ocean fishery and aquaculture industry.
